Using this Wine Poached Chicken recipe as an inspiration for some kind of Chicken meal I'm preparing, plus rice (Indian style, but with European ingredients), plus cabbage and capsicum (to start getting rid of vegetables) ... to be finished off with a sauce/gravy.
Remains to be seen how this goes.
Not enjoying myself at all.
Nearly blew an artery venting earlier.
Almost wish I was dead already. Today's not a good day for me. Everything is pissing me off in a big way.
Now I'm being hassled to go into wage slavery.
Wish I could disappear on a Russian submarine or hide out in Siberia with the bears ... LOL

*Could have exercised more care with vegetables. Otherwise, tastes very good.
Warning: don't try to stick-blend in shallow pan ... LOL. I'm splattered with sauce & so is the kitchen.
Chicken browned, added fresh chopped herbs, onions, garlic, while it was browning; added 3/4 cup wine; let it simmer with lid for few minutes; threw in combo each 1 cup chicken stock; 1 cup milk; more simmer; removed chicken (probably a bit much sauce, but never mind); cooked down 'soup' result a little; added x3 tsp dissolved cornflour & cooked off; added big dollop sour cream; seasoned; threw in sliced chicken. That was nice & easy.
